Ingredients

bread flour

freshly ground Einkorn wheat berries

baking soda

salt

softened butter
½
cup
coconut oil

cup
granulated white sugar
1 ¼

packed light brown sugar
1 ⅓

home made vanilla extract

egg

large
egg yolk
1 ½

Ghiradelli 72% cacao dark chocolate chips
Instructions
Combine flours, baking soda, and salt in a bowl
In mixer bowl, beat softened butter, coconut oil, granulated sugar, and brown sugar until creamy
Add vanilla extract, egg, beat well
Add egg yolk, beat well
Gradually add flour mixture in and beat until combined
Stir in chocolate chips by hand
Let mixture sit in the refrigerator until cool
Pre-heat oven to 375° F
Roll dough into balls
Put dough balls on parchment paper on a cookie sheet
Bake until golden brown, checking after 11 minutes until done
Coll on baking sheet for 2 minutes
Remove to paper towel to cool completely
Notes
Don't skimp on the fresh ground Einkorn or the homemade vanilla extract. Yes, that means you have to prepare that long before you make cookies!
