Chocolate Chip Cookies

This started out as the original Toll House recipe but over time the kids and I made a few small changes. Enjoy!

Chocolate Chip Cookies

Our version of the famous recipe
Course Dessert

Ingredients
  

  • 1 ¼ cups bread flour
  • 1 cup freshly ground Einkorn wheat berries
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ cup softened butter
  • ½ cup coconut oil
  • ¼ cup granulated white sugar
  • 1 ¼ cups packed light brown sugar
  • 1 ⅓ Tbsp home made vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1 ½ cups Ghiradelli 72% cacao dark chocolate chips

Instructions
 

  • Combine flours, baking soda, and salt in a bowl
  • In mixer bowl, beat softened butter, coconut oil, granulated sugar, and brown sugar until creamy
  • Add vanilla extract, egg, beat well
  • Add egg yolk, beat well
  • Gradually add flour mixture in and beat until combined
  • Stir in chocolate chips by hand
  • Let mixture sit in the refrigerator until cool
  • Pre-heat oven to 375° F
  • Roll dough into balls
  • Put dough balls on parchment paper on a cookie sheet
  • Bake until golden brown, checking after 11 minutes until done
  • Coll on baking sheet for 2 minutes
  • Remove to paper towel to cool completely

Notes

Don’t skimp on the fresh ground Einkorn or the homemade vanilla extract. Yes, that means you have to prepare that long before you make cookies!
